I make something like this for myself on most days. I like it because it's tasty, easy, fast, and doesn't destroy my kitchen. Let's get to it.

Pesto Eggs // Recipe Series: Eggs Plus

A quick, easy, tasty meal or snack that dirties very few things. Part of the recipe series Eggs Plus. I make something like this for myself during the day most days.

  • 1 drizzle olive oil
  • 1 egg
  • ⅓ cup whole milk ricotta cheese
  • 2 tablespoons pesto (pre-made, store bought)
  • 1 dusting Parmigiano-Reggiano or Pecorino Romano cheese (parmesan cheese)
  • salt
  • fresh ground black pepper

Instructions

  1. Drizzle a little olive oil into the pan and fry up that egg the way you like it. Add salt.
  2. Put the ricotta in your bowl. Add some salt to taste.
  1. Lay your egg on top of the ricotta in the bowl.
  1. Add pesto on top of the egg.
  1. Add your preferred amount of fresh ground pepper.
  2. Dust with some parmesan.
  1. Eat! You're done!

Notes

This recipe uses pesto, which I buy pre-made. Trader Joe's has a good one, but any will do. We aren't going for the extra credit here and trying to make our own. We're just trying to stay alive and enjoy it a bit.
